I apologize for the late post. I would say it was because I was so busy this past weekend but in reality I got lazy and forgot. Sigh..
Writing this blog has its disadvantages, mainly when I find a favorite dish I don’t get to eat it again because I have so many new recipes to test. This one I will make time to make again.
The original recipe called for this as just a marinated chicken dish, but adding it to pasta with the extra marinade took it to a whole other level.
The recipe calls for a double marinade using all the same ingredients in different proportions. The first marinade sits on the chicken for a couple of hours before it is grilled.
Whereas the second marinade is mixed on the chicken after it is cut into bite size pieces.
The result is some of the most moist and juicy chicken you will ever eat.
I’m living with my boyfriend and his family for the summer and as a result they’ve been the guinea pig for a lot of my recipes. His sister claimed this as her favorite dish yet (even after the black bean tacos!). I call that a win.
Basil Lime Chicken Pasta

- 3 limes, juice and zest
- 3 T olive oil
- 1/4 cup olive oil (preferably extra virgin)
- 3 T Dijon mustard
- 3 T low-sodium soy sauce
- 3 T low-sodium Worcestershire sauce
- 6 green onions, chopped
- 6 cloves garlic, chopped
- 2 T chopped basil
- 3 lbs chicken breasts
- 1 box whole wheat pasta
Combine zest and juice of two limes, 3T olive oil, Dijon mustard, soy sauce, Worcestershire sauce, 3 green onions, and 3 cloves of garlic. Pour into a ziploc bag and add chicken; allow to marinate for at least 1 hour in the fridge. Preheat the grill to high and grill chicken on each side for about 5 minutes. While chicken is grilling boil and drain pasta. Allow chicken to rest for 5 minutes before cutting into bite size pieces. Meanwhile, mix together 1/4 cup EVOO, 3 green onions, 3 cloves of garlic, basil, and zest and juice from one lime. Add chicken to pasta and pour sauce on top until everything is well covered. Makes 8 servings.
