Strawberry chocolate chip muffins

At work we have these giant, delicious muffins. You know, the ones that are really meant for 4 people to share but you devour in one sitting by yourself.  While I love the way they taste, I am not so much a fan of the calorie damage.

Enter the skinny strawberry chocolate chip muffin. It packs the same wonderful flavor of those giant, mass produced muffins with only a fraction of the calories.

Muffin ingredients

A few substitutions to the basic muffin recipe add a lot more nutrition and fills some of those empty calories. Whole wheat flour is used in place of white, apple sauce instead of oil, and mini chocolate chips instead of regular.

Muffin mix

Muffins are a little more delicate than other baked goods because you DO NOT want to over mix the batter. Too much mixing and you end up with chewy, hard, gummy muffins and nobody wants that. Mix the wet and dry ingredients separately and then add the wet to the dry until just mixed.

Place in greased muffin tins and bake until golden delicious.

Strawberry chocolate chip muffins

Recipe modified from: Sally’s Baking Addiction

  • 1 and 1/4 cups whole wheat flour
  • 1/2 t baking soda
  • 1/2 t ground cinnamon
  • 3 T granulated sugar
  • 3 T brown sugar, packed
  • 1/2 cup + 2 T unsweetened applesauce
  • 1 egg white, beaten
  • 2/3 cup diced strawberries
  • 1/3 cup mini chocolate chips

Preheat oven to 350 degrees F. Spray a muffin tin with nonstick cooking spray. Sift together flour, baking soda and cinnamon in a large bowl. In a separate bowl mix the brown sugar, granulated sugar, applesauce, and egg together until well blended. Add the wet ingredients to the dry until just combined. Fold in the strawberries and chocolate chips. Divide batter evenly into 10 muffin tins and bake for 15-20 minutes, until toothpick inserted into center comes out clean. Cool and enjoy!
