This recipe is similar to the grilled corn and tomato summer salad and yet completely different. The best part is you can use almost all frozen ingredients so it is delicious any time of year.
It couldn’t be any simpler either, chop up a few vegetables, mix the dressing, and combine everything in a large bowl.
Trader Joe’s makes a frozen fire roasted corn that is even better to use.
Edamame Corn Salad
- 1 1/4 cups corn kernels (preferably fire roasted)
- 1/2 cup shelled edamame
- 1/4 cup finely diced red onion
- 1/4 cup diced red bell pepper
- 1 T finely chopped cilantro
- 1 T light mayonnaise
- 1 T lemon juice
- Salt and pepper to taste
Combine corn, edamame, red onion, and red bell pepper in a large bowl. In smaller bowl, whisk together cilantro, mayonnaise and lemon juice until combined. Pour dressing over vegetables and stir until well coated. Makes 4 servings as a side dish.
