Tangy apple coleslaw

Last time I made the crockpot BBQ shredded chicken I used this amazing coleslaw as the side. BBQ tends to be a little sweet because of all the sugar in the sauce, so something tangy is the perfect accompaniment.

I’m not a fan of the overly soupy commercially made coleslaws so I was excited to discover the dressing for this was the perfect amount.

Its a simple mix of mayo, red wine vinegar, lemon juice, and a little sugar.

Tangy Apple Coleslaw

Recipe borrowed from: Allrecipies

  • 3 cups chopped cabbage (use the bagged stuff)
  • 1 red apple, chopped
  • 1 Granny Smith apple, chopped
  • 1 carrot, grated (don’t need if bought bagged mix)
  • 1/2 cup finely chopped red bell pepper
  • 2 green onions, finely chopped
  • 1/3 cup mayonnaise
  • 1/4 cup brown sugar
  • Splash of apple cider vinegar
  • 1 T fresh lemon juice

Combine first 6 ingredients in a large bowl. In a smaller bowl, whisk together last 4 ingredients to taste, adjusting for level of sweetness. Pour dressing over other ingredients and mix until coated well. Makes 6 servings Enjoy!
