Crispy garlic parmesan edamame

Some days I come from class and have absolutely no desire to cook. Okay, being honest this happens most nights of the week. However its not good for my wallet or waistline to keep ordering pizza and making froyo runs. Luckily, I’ve discovered a delicious meal that takes no longer than 5 minutes to prepare and is relatively filling and nutritious.

Garlic parmesan edamame ingredients

Throw your edamame in the microwave in a large plastic bag with a dash of water. Close the bag completely except for a one inch opening and heat for about 2 1/2 minutes.

Heat a skillet with a small amount of olive oil on low and chop up a few cloves of garlic. When the garlic begins to get crispy, add your edamame, parmesan cheese, and a dash of salt and sauté for about 2 minutes.

Edamame is packed full of plant proteins and the rest of the nutrients are dependent on how much parmesan cheese and salt you use (obviously the less you use the better the meal will be for you). Enjoy experimenting until you find your most delicious combination!
