Grilled balsamic chicken

Ever have a night where you need to put a good meal on the table but don’t have more than 20 minutes? This is the recipe for you.

Balsamic Chicken

There are only 4 ingredients: garlic, balsamic vinegar, olive oil, and chicken breasts. Seriously, that is it. In the morning before work or school mix everything except the chicken breasts together in a bowl.

 Pour in a Ziploc bag, add the chicken breasts, and throw in the fridge until you get home at night. Twenty minutes before you want to eat pull the chicken out of the fridge and fire up the grill.

 Grill for 5 minutes on each side or until chicken is no longer pink inside.

I know it will look delicious and you will be tempted to dive right in with a fork and knife but don’t! Allow it to rest on a plate for 5 minutes so all the juices disperse and don’t run out when you cut it. I promise it is worth the wait.

Grilled Balsamic Chicken

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2-3 cloves of garlic, chopped
  • Salt and pepper to taste
  • Fresh basil

Whisk together olive oil, vinegar, garlic, and basil (forgotten this time…) in a bowl. Pour marinade in a Ziploc bag and add chicken. Marinate for at least 2 hours but up to 24 hours. Pull chicken out 20 minutes before grilling and heat the grill on high. Don’t forget to coat with cooking spray so the chicken won’t stick! Grill chicken for about 5 minutes on each side, or until no longer pink inside. Rest on a plate for another 5 minutes and enjoy!

(Nutrition is a little hard to calculate on this one because a lot of the marinade is thrown out. Realistically there is less fat and fewer calories in the finished product.)
